Chinese Chicken Salad Recipe


Crowd Pleaser Chinese Chicken Salad Recipe

A friend of mine gave me this recipe for Chinese chicken salad several years ago  and it's always a crowd pleaser.

Chinese Chicken Salad
3-4 chicken breasts
Center of chicken stock
Garlic Salt and pepper to taste
Enough water to cover the chicken
1/2 medium onion
Combine all the above ingredients in a stock pot and simmer over a medium burner from 1-1/2 hrs.
Cool chicken on a plate to drain excess broth.
When completely cooled, shred chicken with a fork into bite sized pieces.Set aside.


Dressing
2 T sugar
1 tsp. Salt
1 tsp. MSG (optional)
1/2 tsp. Pepper
1/4 cup salad oil (Canola will do or if you are gluten free try olive or avocado oil)
1 T sesame seed oil
3 T cider vinegar
Dressing best made ahead of time (1 day) for best flavor

Greens & Garnishes
1 head of green cabbage shredded
1/2 head of red cabbage shredded
1/2 cup toasted sliced almonds
1/2 cup toasted sesame seeds
1 package of Top Ramen noodles crumbled
Add the chicken, greens & garnishes and lastly the dressing
You can double the recipe for a summer potluck party
Serves 8
