Delicious Apple Cake Recipe
In kicking off fall this weekend, I made a delicious apple cake to go with my morning coffee.
My mom always made this cake in the fall when I was growing up and even though I love all things chocolate, this cake always made me smile.
This is similar to hers but is gluten free and taste just as good.
Fall Apple Cake (gluten free)
3 C almond flour
1 1/2 tsp Xanthan gum (you can find this at most health food stores)
1/2 tsp salt
1 tsp baking soda
1/4 tsp ground cloves
1/2 tsp ground nutmeg
2 tsp cinnamon
1 C sugar (I use Swerve instead of sugar)
1 C brown sugar
3/4 C melted butter
1/2 C applesauce
3 large eggs
1 tbsp vanilla
3 large apples sliced (I use Gala but you can use Granny Smith as well )
Whisk flour, xanthan gum, salt, soda, cloves, nutmeg and cinnamon together and set aside.
With an electric mixer, cream sugars, butter and applesauce.
Beat in eggs one at a time, then add dry ingredients.
Gently fold in sliced apples and pour into a greased Bundt pan.
Bake at 350 degrees for 50 min.
As many ovens differ in heat, begin checking cake at 35 min. to see if it's done.
Let cool 20 minutes.
