Spinach Chutney SaIad Recipe
l Iove making salads for summer dinners especially when the weather is hot and humid.
Even though summer is ending, I still like serve salads for dinner most nights and weekends.
Spinach Chutney Salad
I first made this salad almost 20 years ago and all my friends still enjoy it.
It's light and crunchy and perfect for hot summer nights.
2 lb. fresh baby spinach leaves torn into pieces
3-4 diced delicious red apples
2/3 cup roasted Spanish peanuts
1/2 cup raisins
1/3 cup sliced green scallions
2 T toasted sesame seeds
1/2 cup white wine vinegar
2/3 cup olive oil
1.5 T Major Grey's chutney
1 tsp curry powder
1 tsp salt
1 tsp dry mustard powder
1/4 tsp tabasco sauce
Mix together and add the dressing and apples right before serving
