Another favorite salad of mine is a  pasta salad that is definitely a crowd pleaser.When we have large gatherings at the ranch, we serve this salad and we always run out.


Pesto Tortellini Salad
1 double packet of refrigerated cheese tortellini (I pick it up at Costco)
1 jar 22 oz. of refrigerated Pesto sauce (I use Costco Kirkland brand, or I will make my own if I have enough basil from my garden)
1 pint of cherry tomatoes each sliced in half
1 each of yellow, red and orange bell peppers julienned
1 package of baby spinach leaves
1 pint sliced mushrooms
4-6 oz. (to your taste) parmesan cheese
I cook the tortellini and wash the spinach the day before.
It is best to assemble all the ingredients the day of your event, so things are fresh.
Basically, I just add all ingredients and the pesto sauce to taste.
Once I have that ready, I sprinkle Parmesan Romano cheese on top for the final presentation.
